Concession Stand Makeovers

News from Cornell's Food and Brand Lab:

A new study in the Journal of Public Health, "Concession Stand Makeovers: A Pilot Study of Offering Healthy Foods at High School Concession Stands,"coauthored by Dr. Brian Wansink (author of the forthcoming book Slim by Design), shows that adding healthy options to high school concession stands can increase sales and customer satisfaction. "If you're a concession-stand sponsor, and you want people to eat better, and you want to make more money, add at least five healthy items," says Brian Wansink, the Cornell lab's director and a marketing professor. "There's got to be a critical mass, and we find that five's a very lucky number, and ten is even better."

Syrup is sweet, but how about sap?

From www.WellspringForestFarm.com:

Syrup is Sweet, but how about Sap?

"Maple sap, along with other tree saps, has long been viewed as a spring tonic by many cultures around the globe. It is usually about 98 percent water and 2 percent sugar, but little known is that it is also loaded with minerals, nutrients, enzymes, antioxidants, phenolic compounds, and more. Worldwide, there have actually been three International Symposiums on Tree Sap Utilization, (1995, 2000, and 2005) where scientists from Japan, Korea, Russia, and Europe discussed the use of tree sap as an end product – most birch."

Event: Food Safety Modernization Act and our Regional Food System (10-23-13)

Announcement:

Food Safety Modernization Act and our Regional Food System
When: Wednesday, October 23rd
Time: 6:30pm - 8:30pm
Location: Tompkins Cortland Community College, Room 210B, Dryden, NY

The Food Safety Modernization Act, signed into law in January of 2011, grants the U.S. Food and Drug Administration (FDA) broad new powers to monitor food safety and significantly impacts how food is grown, handled and processed. In South Central New York and across the country, a strong regional food system is being re-envisioned, and small and mid-sized farms and alternative food distribution models are at the center of this change.

Join the Food and Health Network of South Central NY to learn about the food safety regulations proposed by the Food and Drug Administration. A panel discussion will explore the potential impacts on different sectors of the food system, and alternative solutions. The event is open to the public.

Prior to the forum from 5:30-6:30 p.m., local producers are invited to attend an informational session on the "Sustaining Farm to School in New York State" pilot program. Local producers will learn more about the opportunity to sell product to area schools through Broome-Tioga BOCES. The informational session will highlight institutional food safety training needs and opportunities, including a two-day Cornell GAPs workshop on November 12-13 in conjunction with the pilot program. To register for the informational session, please contact Rose Zonetti at rzonett1@gmail.com

Everyone has a stake in the future of our food and farms, and it is critically important that scale-appropriate regulations support sustainable agriculture and access to fresh, healthy, and local food. The forum is open to the public, and all are welcome to attend! The event is presented in partnership with NOFA-NY and Sustainable Cortland.

Visit www.foodandhealthnetwork.org
To RSVP, contact Erin Summerlee at rhsc-rf@rhnscny.org, 607-692-7669.

Fall Dining Promotions to Benefit Finger Lakes Meat Project

Press release:

FALL DINING PROMOTIONS TO BENEFIT FINGER LAKES MEAT PROJECT

Two Ithaca restaurants will offer special fall dining promotions to raise funds for The Finger Lakes Meat Project ( http://www.fingerlakesmeatproject.com/ ),an agriculture development project at Cornell Cooperative Extension of Tompkins County (NY).

Each weekend in October, the Carriage House Café, located at 305 Stewart Avenue, will offer a locally-sourced brunch special, while Fine Line Bistro, located at 404 West State Street will offer a "Meat Locker Special" dinner on Wednesdays from September 25 through October 16. Each restaurant will donate a portion of the proceeds from specials sold to The Finger Lakes Meat Project.

"Both restaurants are longtime supporters of the local meat movement, and regularly feature locally sourced foods on their menus," says Matt LeRoux, Ag Marketing Specialist at Cooperative Extension who oversees The Finger Lakes Meat Project. "They truly can be considered 'Champions' of the local foods movement, because they consistently support local farmers and strengthen our regional food system with their purchases, " he continued.

In addition, Jillian's Drawers, located on the Ithaca Commons, is selling Finger Lakes Meat Project buttons for $1 each. The colorful buttons feature silhouettes of chickens, goats, lambs, and more, and are a big hit with Ithaca's tiniest residents!

The Finger Lakes Meat Project has two components designed to help consumers increase their local meat purchases. The Meat Suite, an online database at http://meatsuite.com, lists local livestock producers who sell meat in bulk directly to consumers. The Meat Locker Pilot Project will build two walk-in freezers at downtown sites in Ithaca and Corning (NY) with units that consumers can rent to store their bulk meat purchases. The aim of the project is to increase livestock production and "freezer trade" meat sales throughout the region by removing some of the main barriers to consumer bulk meat purchases, specifically the difficulty to find producers and the lack of home freezer space. Cider Week FLX 2013: Celebrate Hard Cider in the Finger Lakes (10/4/13 - 10/13/13)

Announcement:

Finger Lakes Cider Alliance Presents the 2nd Annual Local Cider Week
The Finger Lakes Cider Alliance, a collaboration of local cider makers and orchardists, is hosting the 2nd Annual Finger Lakes Cider Week from October 4th to October 13th.
Anchored by the Ithaca Apple Festival on the first weekend, Cider Week offers a variety of tastings, cider dinners with local chefs, informative talks, local orchard tours, and a chance to talk with the cider makers behind the craft. A number of the events are family friendly.
Finger Lakes Cider Week is a celebration of one of our country's oldest alcoholic beverages, cider/hard cider.  This week of activities is patterned after the popular New York (City) Cider Week that is presenting its annual celebration later in October.  All things apple and cider are in the spotlight as the local cider alliance shows off the quality and versatility of a drink that has a rich history as an integral part of our nation's growth and a future that will help bolster the local economy and preserve small, high-quality orchards.  A leader in U.S. apple production, New York State is becoming a leader in the revival of this historic beverage.
Participating Cideries include, Red Byrd Cidery (Burdett), Eve's Cidery (Van Etten), and Bellwether Hard Cider (Trumansburg). Additional ciders will be sourced from Beak & Skiff (LaFayette), Harvest Moon Cidery (Cazenovia) and Steampunk (Medina).
