Recipe: Spelt Berry Dinner


Spelt berries for dinner?  Yes!

Spelt berries aren't berries at all -- spelt is a type of wheat and the berry is the whole wheat kernel.  And they're hearty enough to make a great vegetarian meal.

Spelt Berry Dinner
(this is a variation of a similar recipe for freekah on Ithaca's Food Web).

Throw 2 cups of spelt berries* into a rice cooker with 4 cups of water. After it's done, put half in a bowl and let it cool.
Fry cubes of tofu* (1 lb total) in oil, add to spelt berries.
Fry chopped mushrooms* in oil, add to spelt berries.
Add generous amounts of chopped sun dried tomatoes in oil to spelt berries.
Mix up an oil and vinegar salad dressing (about a 1/4C total?), with salt and pepper and your favorite herbs, and add it to the salad.
Serve on a bed of lettuce* with a big slab of goat cheese*.

Yum!
