A holiday meal that won't disappoint your guests: slow-cooked lamb shanks, creamy mashed potatoes, and tangy kale. Yum. And, almost all of the ingredients are available locally right now.

For the mashed potatoes, just about any recipe will do. We used a mix of red and russet potatoes with the skins on and mashed them with garlic and whole milk.
For the kale, we stripped out the stalks, then boiled for about 8 minutes, then splashed with balsamic vinegar.
