Ithaca foodie Amy from Eggs on Sunday has a great recipe for Butternut Squash Biscuits, based on a recipe from Mark Bittman's How to Cook Everything book. Funny thing, I recently tried to adapt his recipe using sweet potato, and it just didn't do it for me. I haven't tried Amy's version, but I'm sure it's a hit.
Really yummy. I loved the idea of the recipe - and how it could get some vitamin orange into my kids in the guise of a buttery biscuit. Tried them last night with lentil soup and they were delicious.
