Today's issue of the The New York Daily News featured Ithaca's very own Piggery. The Piggery operates a pork CSA both in Ithaca and in Brooklyn.
When I spoke to farm owner Heather Sanford a couple months ago, I asked her about marketing their heirloom pork. Why not hook up with high end chefs to get a premium price for their meat, I asked. She explained that due to the nuances of food laws and their particular certification, The Piggery can only sell direct to consumers -- hence the need to expand their CSA to the NYC region.
